.: What is Dendê?
Dênde is the seed from dendezeiro palm tree; its scientific name is
"Elaeis Guineensis" This palm grows in tropical regions, with hot
and humid climate, and was brought to Bahia from Africa on XVIIth Century,
jointly with the slaves. The fruit of this palm produces a vegetal oil very
well known because of being one of the main ingredients of Bahia's traditional
cooking, used to make plates such as "acarajé", and many
kinds of "moqueca" with shellfish, fishes, vatapá or caruru.
This is a big palm that lasts many years. When adult, dendê offers perfect
covering to the ground, and is able to be considered a system of acceptable
ecological stability and low negative impacts to environment. Its average
production life is 25 years and its farming generates permanent and well qualified
jobs.
